CHŁODNIK (Chilled Beet Soup).
Are you a fan of Gazpacho? Then, you might like this beautiful Polish beet chilled soup. The beet version of 'Chłodnik' is made with fresh beetroot, natural yoghurt, and is usually served with fresh cucumber, raddish, egg and dill. Don't forget to add the beetroot stalks and leaves that are not only edible but delicious too.
Beet greens contain more vitamins and minerals than the root itself. Besides supplying good amounts of protein, phosphorus, and zinc, beet greens are also a great source of fiber. Packed with antioxidants, they're high in vitamin B6, magnesium, potassium, copper, and manganese, and low in fat and cholesterol.
For the CHŁODNIK you will need:
4-5 beets with stalks and Leaves;
1 litre of vegetable stock,
500 ml of natural yoghurt (or buttermilk);
1 tsp of brown sugar,
1 tbsp of lemon juice,
1 tsp of rice vinegar (optional);
salt and pepper.
Wash the beetroot and their greens, chopp them finely and cook in a little water. Bring to the boil and simmer for 20 minutes or until soft. In a meantime add lemon juice and the vinegar (optional).
Pour in the vegetable stock, sugar, and leave to cool until completely cold. At this point you might consider to blend the soup. After that, add the yoghurt or buttermilk and stir. Add some more lemon juice for your liking. Season with salt and pepper. To spice it up you might add some horseradish.
Serve with finely chopped cucumber, raddish and dill. In a Poland the soup is also served with hard boiled egg. But it's optional, so try different variations and make your very own formula for the pink Queen of the Summer! Enjoy!
