Millet grain rolls
Millet provides a host of nutrients, such as Magnesium, Vit B3, Thiamin, Zinc, and dietary fibre. Millet has a sweet nutty flavor, and is considered to be one of the most digestible and non-allergenic grains available. It is one of the few grains that is alkalizing to the body, which is extremely important as many food we consume nowadays tend to make our body more acidic.
Millet grain rolls are extremely simple, and let me tell you this, delicious.
For the Millet grain rolls you will need:
2 1/2 glass of wheat flour
1/4 glass of millet grains
1/2 glass of water
25g of fresh yeast (or 7g of dried yeast)
3/4 glass of warm water;
egg white
1/2 tsp of sugar (optional)
Preparation
cook the millet in 1/2 glass of water for about 15-20 min. until the water is absorbed, then cool it down.
Combine the 3/4 glass of water with yeast, and sugar on the large bowl. Add flour and the cooked millet and mix until it forms a dough.
Leave to prove in a warm place for approximately 30 minutes.
Form into small, round rolls (you should get about 10 tolls), and bake for 20 minutes at 200 C.
Cover with a clean, dry towel when cooling. Enjoy!
