MANGO CHIA PUDDING
Few words why this mouth watering mango chia pudding is so good for you!
Chia seeds, which are members of the Salvia Hispanica family, along with mint, were a prized food to the ancient Aztecs and Mayans. "Chia" means strength, and the seeds are known for their energy-boosting properties. Two tablespoons of the seeds contain: nearly 65% more potassium than banana; over 40% of the recommended daily fibre intake; 5 times more calcium than milk; 100% more omega 3 fatty acids than salmon; 3 times more iron than spinach; over 30% the recommended magnesium intake. Mango chia pudding is the perfect afternoon snack. Why is so perfect? It’s creamy, fruity, and simple delicious.
For the mango chia pudding you will need:
3 tablespoons chia seeds;
1 cup canned coconut milk (room temperature);
1 tbsp maple syrup (optional);
1/4 teaspoon vanilla extract;
1 cup mango puree ;
Place the coconut milk, chia seeds, vanilla extract and maple syrup (if you use some) in a bowl and stir until well combined. Refrigerate for half an hour and stir again. Cover the bowl and chill overnight or for four hours at least. To serve, layer the coconut chia pudding mixture and mango puree in two glasses, finishing with some coconut.
